Sesame Kale Salad

Sesame Kale Salad

  • 1 Bunch kale

  • 1 bunch radishes or salad turnips (save the turnip greens and throw them in a stir fry or salad!)

  • 2 tablespoons soy sauce

  • 2 tablespoons toasted sesame oil

  • 1 clove garlic, minced

  • 2 teaspoons honey (or other sweetener)

  • 1 tablespoon apple cider vinegar or rice vinegar

  • Dash of black or ground red pepper

  • 1 tablespoon toasted sesame seeds

Strip kale leaves from stems and chop into strips, approximately ½ inch wide. Mix dressing ingredients in a bow and add to greens and sliced radish. Toss and marinate 30 minutes or more.  Some prefer to massage the kale with the dressing in their hands, however do be aware that some of the kale right now is so tender, so you may not want to marinate it that long or even massage it.

Toss with toasted sesame seeds and serve. You can also steam the greens for a softer salad.
