Cucumber and Red Onion Salad

This is a tasty, tangy, crunchy and refreshing salad. Enjoy it as a side dish, on a salad or sandwiches or in wraps. Since we don’t have red onions at the moment, I use our delicious red-green onions in their stead until we do have some. Feel free to use more or less of these according to. your taste.

Ingredients:

  • 2-3 cucumbers, very thinly sliced (mandolin if you have one)

  • 3 red-green onions, very thinly slice the red part and then continue to slice the greens at an angle (be sure to use nearly all the green part of the onion save the top 1/2” or so)

  • Optional Herbs: 1/2 cup chopped dill, mint, basil, parsley

  • 1/3 cup apple cider vinegar

  • 1/4 water

  • 1-2 tablespoons sugar, taste dependent

  • pinch or two of salt and fresh ground black pepper, to taste

Mix the cucumbers and onions, being sure to make sure the onion slices are broken apart.

Mix the dressing and then add to the cumbers along with the herbs if using. Stir and refrigerate until serving.
